The Vineyard Bears Fruit!
It’s the end of the season and we’ve just picked the last of our tomatoes from the allotment. This year through our GROW Allotment Project and with the help of the ‘Sustainable Food Grant’ from Causeway Coast and Glens Brough Council, we have supplied 80 families with tomatoes to supplement their Foodbank parcels!
Here at the Vineyard we have been sharing our recipes and we are in agreement that as the dark nights draw in, there are few dishes more comforting than a hearty tomato soup. Why not try this simple soup recipe:
Step 1
Heat butter and olive oil in a large saucepan over medium-low heat. Cook onion and garlic until onion is soft and translucent, about 5 minutes. Add tomatoes, water, sugar, celery seed, oregano, red pepper flakes, salt, and pepper. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
Step 2
Remove from heat and puree with an immersion blender. Reheat soup until warm and season with salt and pepper.
